Bonnie's Bunny Rolls

Here is the recipe I use - but you can use any sweet orange roll recipe you like.

Soften : 2 pkg yeast in 1/4 C warm water

Mix: 1 cup scalded milk
1/2 cup sugar
1/2 cup shortening
1 tsp salt
Cool to luke warm

Add 2 cups flour & beat well (recipe calls for 5 - 5 1/2 cups flour)
Add yeast & 2 eggs Mix well

Add 2 tsp orange rind and 1/4 cup orange juice

Add remaining flour a little at a time until dough is soft. You don't want it too sticky - but not as stiff as bread dough. Rest for 10 minutes - knead - let rise until double - punch down and rest for 10 minutes. Form into "bunnies". Let rise until doubled then bake in pre-heated 400 degree oven for 8-10 minutes.

You can prepare a glaze of 3 Tblsp corn syrup & 1 Tblsp orange juice and brush over rolls last 5 minutes of baking
OR:
Thin confectioners sugar with orange juice until quite thin and brush over rolls after baking is finished. Sprinkle with multi-colored non-pariels.

Forming bunnies: Pinch off a fist-size portion of dough and set aside. I just eye-ball the amount of dough for each bunny - but you want to be able to roll a rope about 1/3" thick and about 8 inches long. Holding the two ends, cross one end over the other forming the bottom of a figure eight. Take the ends and cross over again leaving the ends sticking up on top to form the ears. The dough is quite elastic and will pull together and close in the circles naturally. Pinch off a little from the portion you set aside and roll it into a ball - placing it in the bottom circle - for the tail. pinch it into dough a bit so it will bake onto the roll.
