Hi family! This is a receipe that Amanda probably remembers making with her cousins at my house! This cookie receipe is yummy and is baked in a waffle iron instead of the oven, making it a great way to start kids baking! This is a fun activity for a snowy or rainy afternoon!
Place 9 tablspoons of bakers cocoa. ( Thats the powdered stuff in the can with no sweetening,) and 3 Tablspoons vegetable oil in a mixing bowl. Blend this up real good till it is smooth. Basically what we are making here is unsweetened chocolate squares, so if you happen to keep unsweetened chocolate squares around, the equivalent would be 3 squares melted. Blend this with 1 Cp. butter and 1 teas. vanilla. Break 4 eggs in another bowl and add 1 1/2 C sugar. Beat this mixture till fluffy and add it to the chocolate mixture. Beat this well. Add: 2 C flour, 1/2 teas. salt. Mix this till well combined.
Drop teaspoonfuls of this onto a preheated, lightly oiled waffle iron. The iron will tell you when the cookies are done. Take them out with a fork and cool. Ice these yummy chocolate cookies and serve.
